Polylysine

Polylysine is a homopolymer of L-lysine, one of the essential amino acids. It is linked by peptide bond formed with α-carboxyl of L-lysine and ε–azyl from other L-lysine, with molecular weight between 4130-5776, usually used as food preservative. It has a wide antimicrobial spectrum, good heat resistance, and wide pH range adaptions and other advantages.
